Picolit

vintage

2020
A noble, ancient Friulian grape variety, described by Veronelli as a “wine for meditation.” Giacomo Perusini was the first to select and cultivate it in the Colli Orientali. The history of this wine has since been intimately linked to the Perusini family. It can be enjoyed on its own at the end of a meal or, like Sauternes, paired with pâté or blue cheeses. The Picolit Perusini, dried in crates and then aged in tank and bottle, features an elegant aroma of acacia flowers, honey, and dried apricot.

After being carefully hand-harvested to avoid crushing the berries, the Picolit rests for about two months in drying crates at room temperature. During this period, Botrytis Cinerea develops, enriching the grapes with particularly refined aromas and fragrances. Once pressed, the must is fermented in steel, undergoing a slow fermentation that can last up to three months. The wine then matures first in steel tanks and subsequently in bottle before being released.
