Zenta Rosso is born from the selection of the finest Merlot and Cabernet Sauvignon grapes sourced from the most suitable vineyards. Each parcel is vinified separately to enhance the identity of the terroir and optimize grape maturation.
After destemming, the intact berries undergo a long, low-temperature maceration that favors a selective extraction of tannins, which naturally protect the wine. Alcoholic fermentation is followed by rapid settling and sur-lies aging with malolactic fermentation. The wine then rests in 228-liter French oak barriques, crafted with steam-bending and custom toasting to elevate aromatic finesse. After the final blend and a short maturation in steel, the wine ages in thick glass bottles to ensure both thermal stability and protection from photo-oxidation.
